The Pecorino d’Abruzzo is a cheese made from pasteurized sheep’s milk, seasoned from 20 to 60 days. It’s aged in baskets that give it his typical cylindrical shape, pale yellow color, sweet and delicate flavor.
The Montepetra is manufactured with pure pasteurized sheep’s milk, coagulated with lamb natural rennet and stewed with hot whey. Salted by hand and seasoned on fir boards for 4 or 5 months, is characterized by the slightly bubbled white paste, with a definite but not strong taste.
