Fontina D.o.P
The basic element of Fontina is the milk of two typical Valdostane breed, the spotted red and the spotted black cows, which produce a high quality and tasty milk, that gives this cheese a bouquet of intense, rich flavors.
The production process involves the use of fresh milk and begins within two hours from milking, the cheese is salted and matured on fir shelves, treated daily with great care. After about five months the cheese is ready, the dough is soft and elastic, with a pale yellow color that varies in intensity depending on its age.
The crust is thin with colors ranging from beige to brown, the decoration has typical skyline of the Matterhorn, as the brand that distinguishes the tutelage consortium.
